Our Head Chef Matthew Vassallo has a culinary philosophy and passion that reflect the growing trend towards a healthier and down-to-earth lifestyle. Food is not just eating energy, it’s an experience! Working with neighbouring farmers to seek out the finest in regional and local produce is the essence of this cuisine. My preference is to allow the natural flavours of food to express themselves. Grown by farmers and inspired for the most beautiful final product. In addition to cooking, my passion is to develop younger students to discover their own talents in the same way that I was encouraged by many great chefs.

Massimo Farrugia, our Sous Chef, a trained chef with nearly two decades of experience in the world of gastronomy. Notable for his achievements, Chef Massimo early in his culinary journey at 21 years of age, reached a pinnacle when he participated in the prestigious Bocuse d’Or Europe 2008 as a commis chef, leaving a good impression on the international stage along side the team, representing Malta. With an unwavering commitment to excellence, he has sharpened his skills in renowned kitchens across the country and abroad, mastering a diverse range of expertise. Chef Massimo’s techniques, impeccable taste, and attention to detail continue to captivate diners, making him a true culinary luminary.
